When you just don't have the time or energy to put into your meal!
There we many moments in the first few weeks of my keto journey that I was feeling awful, cranky, tired and certainly not like cooking. So what do you do when you just aren't into it but don't want to fall off of the keto wagon?
Your precious body needs nutrition..greens, fiber, protein and good fats so balancing can be really tough when you hit these moments. Above is am example of a kteo lunch that took me 5 minutes to prepare and hit the spot in every way possible!
Simple Lunch Plate
1 cup cooked chicken breast strips (I keep a stash of these for each weeks meals, turning it into chicken salad, chicken caesar, you name it!)
1/3 cup snow peas (washed and ends/string removed)
1/3 cup cottage cheese (full fat)
1/4 cup cashews (flavor of choice-spicy shown)
1 tbsp spinach dip
Put on plate.
Serve & Devour!
It truly is as simple as that and even if you aren't feeling overly hungry, which happens quite a lot, you will be satisfied and meet the requirements that your body needs to succeed on your keto plan!
