Everything Keto Cookies
Preheat oven to 350
Grease cookie sheets
In a large bowl, add:
3/4 cup coconut oil, softened
2 whole eggs, slightly beaten
1 sugar free vanilla pudding cup
1 tbsp molasses
1/2 tsp pure vanilla
Whisk until fluffy and well mixed.
Add:
2/3 cup Monk Fruit, granulated
Whisk until light and fluffy, 5 mins.
Add:
2 tbsp PB & Me Hazelnut powder
1 scoop Nutiva MCT, chocolate
1 1/2 tsp baking powder
1/2 tsp salt
Mix with spoon until well combined.
Add:
1 cup Bob's Red Mill Paleo flour
1/2 cup almond flour
Stir until combined, don't over mix.
Add:
1/2 cup each dry roasted peanuts, chopped or crushed
1/2 cup Lily's chocolate chips
Stir until mixed.
Drop by round tbsp onto greased baking sheet, leaving 2" room between for spreading.
Bake 9-11 mins.
Serve & Devour!
