Salt & Vinegar Keto Chicken Tenders

These are unreal good!! They are fantastic for get-togethers, game day or a yummy dinner!

Keto Chicken Tenders


Prep:


Preheat oven to 375

Prepare a large package of chicken tenders and remove any tendons or veins.

Grease large baking sheet.


In a small bowl, add:

2 eggs

1 tbsp water, room temp

1/4 tsp garlic powder

1/4 tsp sea salt

Lightly beat with a fork until well mixed. Set aside.


In a large bowl or deep plate, add:

2 cups salt & vinegar pork rinds (or 2 cups regular pork rinds & 1 tbsp salt and vinegar popcorn seasoning)

2 tbsp fried onion (dried)

1 tbsp fried garlic (dry)

Pulse in blender until crumb-like texture.


"Breading"


Dip each tender in the egg mixture, let excess drip off. Roll in pork rind crumb mixture until evenly coated. Place on greased baking sheet, larger pieces to the middle, smaller towards the edges.


Bake for 15-20 mins, flipping once halfway through the cooking time for an even brown. Remove from oven and cool for 5-10 mins.
