Keto Raspberry Macadamia Chocolate Chunk Cookies


Preheat oven to 350

Grease baking sheet


In small bowl add:

2 tbsp raspberries

1 tbsp granulated Monk Fruit (or sweetener of choice)

1/4 tsp xanthan gum

Mash together with a fork until jam-like consistency and mixed well, set aside.


In a large bowl, add:

1/4 cup coconut oil

1/4 cup almond butter

1 tbsp butter

Cream together until well mixed (can use electric mixer).


Add:

1 whole egg, slightly beaten

1/2 cup granulated Monk Fruit (or sweetener of choice)

1 tsp pure vanilla

Mix until well blended and creamy.


Add:

1 1/3 cups almond flour

1/3 cup coconut flour

1/2 tsp baking powder

1/2 tsp cinnamon

pinch of salt

Mix well until combined.


Add:

2 tbsp raspberry jam (either sugar free or homemade as above)

1/8 cup dark chcolate (broken into pieces/chunks)

1/8 cup Macadamia nuts (roughly chopped)

Stir just until combined.


Set mixture in refrigerator for 15 mins. Wet hands and roll dough into golf ball sized balls. Place them 2 inches apart on well greased baking sheet and flatten slightly with palm (they will spread a bit, if you want more dense cookies skip this step).


Bake 14-16 minutes, until golden. Cool for 5-10 mins.


Serve & Devour!
