OMG Keto Dump Brownies

You will honestly be astonished that this dessert is keto, it is one of the best desserts that I have ever created!

Keto Brownies


Grease a small square pan, or loaf pan.

Brew small cup of strong coffee, set aside to cool.

Prep:


In small pan, melt:

1/2 cup butter

Melt over medium heat, stir often to avoid browning. Reduce heat to low and keep warm until you need it.


In small bowl, add:

1/2 cup cream cheese, softened

1/4 cup + 1 tbsp monk fruit, granulated

1/4 tsp vanilla

Whisk until smooth and fluffy. Set aside.


On bottom of greased pan, spread:

1/2 cup unsweetened coconut, shredded

1/4 cup pecans, chopped (or nut of choice)

1/8 cup walnuts, chopped (or nut of choice)

Sprinkle coconut and nuts evenly over the bottom of the greased pan. Set aside.


Cake:


In bowl, add:

3/4 cup almond flour

1/4 cup coconut flour (or psyllium husks)

1/4 cup monk fruit, granulated (or sweetener of choice)

1/4 cup cocoa powder

1/4 cup psyllium husks

1/4 cup sunflower seeds, salted

2 tbsp Nutiva MCT powder (or chocolate/vanilla protein powder)

1 tsp baking powder

1/4 tsp sea salt

Mix until well combined and form a well in the center of the dry mix.


In well, add:

2 large eggs

1/3 cup melted butter (make sure it is not hot or it will cook the eggs)

1/4 cup strong coffee , cooled (decaf is fine also)

1/3 cup monk fruit, granulated

1/2 tsp vanilla

Mix ingredients until smooth and glossy.


Marbling:


Spoon cake batter over top of the coconut/nut layer. Drop heaping tbsps of the cream cheese mix on top of the batter, leaving heaping dots all across. Take a long skewer (all I could find was the rod end of my electric mixer beater lol), and drag it throught the mixtures, swirling the two together. Be sure to go all the way to the bottom of the pan to mix the coconut and nuts through. Leave a noticeable marble, try not to over-mix as the gooey pockets are divine! Sprinkle the top with a handful of sugar free chocolate chips if desired!


Bake for 55 minutes. The inside will still be a bit jiggly, this is is good thing! Let it set for 30 mins (if a more dense brownie is preferred put it in the refrigerator for a few hours or leave in until ready to serve). If served warm, use a spoon to scoop onto plate, if cold cut into bars.


Serve & Devour!


*this is awesome with chocolate, no sugar added ice cream like Chapman's*
