Keto Buddha Bowl
In pan, at medium high heat add:
1tbsp olive oil
1 tsp each butter and coconut oil
Heat until liquid.
Add:
1/2 cup bacon, chopped
1/4 cup sweet onion, chopped
Cook, stirring often until the onion is translucent.
Add:
1 cup of riced cauliflower
1/2 cup kale
1 tsp garlic salt
1/2 tsp sea salt
Cook, stirring often, until cauliflower is tender crisp and kale wilted (approximately 8-10 mins).
In a bowl, layer:
Warm cauliflower mix
1/2 cup shredded cheese of choice
1/4 cup guacamole (see recipe)
1 tbsp each sunflower seeds, dried cranberries, pumpkin seeds
1 tbsp chili lime peanuts (optional but super yummy!)
Serve & Devour!
