Keto Boneless Buffalo Wings
Prep
Preheat oven to 425
Grease large baking sheet (2 if needed)
Melt:
1/4 cup butter
3 tbsp Hot Sauce
Melt over low heat and whisk until well combined. Keep warm until needed and then trnasfer to a small bowl.
In small bowl, add:
2 eggs
2 tbsp water
1 tsp Tequila (can omit)
Beat with fork until well combined & set aside.
In two small bowl, add:
1/2 cup pork rinds, pulsed in blender until fine (x2)
1 tbsp psyllium husks (x2)
1 tbsp lime, grated finely (x2)
1/2 tbsp garlic powder (x2)
sea salt & black pepper to taste (x2)
Add quanties above to two separate bowl. Mix with fork until well blended & set aside.
Prepare:
8 large chicken breast
Cut into 1" squares and set aside.
Wing Station:
Set up your wing station by placing the chicken pieces on one end, followed by the egg wash, then one bowl of crumbs, next the buffalo butter, the second bowl of crumbs and then your greased baking sheet.
Starting with the egg wash, dip each "wing" in the egg wash first and let excess drip off, then roll in the first bowl of crumbs until well coated. Dip quickly into the buffalo butter and then roll in the second crumb mixture until well coated. Place each on greased baking sheet.
Bake for 15-20 mins until the coating is crispy and the chicken is no longer pink. Let cool for 5-10 mins.
Serve & Devour!
