Keto Cauliflower Mac 'n' Cheese
In large frying pan, add:
2 tbsp bacon bits
1 tbsp butter
1 tbsp fried garlic (fresh if preferred)
Melt butter over medium heat, then add reamining ingredients. Fry until garlic and bacon has softened, about 5 mins.
Add:
2 cups chopped cauliflower
1 cup chopped, cooked chicken breast
Stir-fry until cauliflower is tender crisp, and chicken is golden brown, about 10-15 mins.
Add:
1 cup heavy cream or half and half
1 cup each cheddar and Mozzarella cheeses, grated (or other blend if desired)
1 tsp garlic salt
sea salt and pepper to taste
Add above ingredients, reducing heat to medium-low. Stir frequently until cheese melts and sauce thickens, if too thick add a few tbsp of water, approx 10-15 mins.
Serve & Devour!
*try different combinations of cheeses, shown here with havarti, cheddar and jalepeno mozza, as well as diffrent flavors of chicken breast (BBQ is delicious and great for summer)*
