Berry-licious Keto Pancakes


Keto Berry Pancakes

In large bowl, add:

3 whole eggs

1 tsp pure vanilla

1/4 cup coconut milk (or milk of choice)

Mix with a fork until well combined and frothy.



Add:

1/2 cup almond flour

1/8 cup coconut flour

1-2 tbsp granulated monk fruit (or sweetener of choice)

1 tsp baking powder

Mix ingredients until combined.



Fold in:

1/2 cup of mixed berries, frozen (shown with blueberries & raspberries)

Fold gently as not to crush the berries.



Let batter sit and thicken for 5-10 mins. Grease flat griddle or large pan well (you may have to grease in between each set of panckes cooked). If the batter is too thick add a bit of water to loosen.

Heat pan to medium high heat. Once pan is hot, drop batter by 1/4 cup and cover. Cook for 2-3 mins or until the edges are golden. Flip and cook for an additional 2-3 mins or until golden and firm in the center. Serve with homemade Keto Maple Syrup (see recipe).



Serve & Devour


*make in double or triple bathces to freeze-cool well before putting in the freezer*
