Sicilian Keto Chicken


Coat with olive oil:

1 large, deep pan


Add:

4 chicken breats

Cook, flipping several times, until cooked throuch and browned. Remove from pan and cover loosely with tin foil and let rest for 10 mins (make sure to do this as it helps the chicken to retain more of it's juices when cut). Cut into cubes and set aside.


In the same pan add:

1 tbsp of butter

1 clove of garlic, minced

Cook, stirring frquently until golden and fragrant, do not burn.


Add:

Cubed Chicken

1/4 tsp each dried basil, oregano & onion salt

Cook until the spices are fragrant.


Add:

1 cup of half in half (heavy cream if desired)

1/2 cup chicken bouillon

1/4 cup fresh parmigan

Simmer for 5-10 mins until the sauce thickens.


Add:

1 1/2 cups of spinach

1/2 cup roasted red peppers

Let simmer until the spinach has wilted.


Serve and Devour
