These fabulous little bites are the perfect way to satisfy that sweet tooth, an allowable indulgence!
Keto Lemon Blueberry Cheesecake Bites
Preheat oven to 350
Line muffin tins with liners (8)
In a small bowl, add:
1/3 cup Lemon Glutenull Lemon Cookies, crushed
2 tbsp butter, melted
1 tbsp Monk Fruit, granulated (or other)
Add ingredients to the bowl and mix until it looks like wet sand. Set aside.
In a large bowl, add:
Line muffin tins with paper liners (8)
1 pkg plain cream cheese, softened
1 egg
1 tbsp sugar free blueberry jam
1 tsp lemon rind, grated
1/4 cup sour cream
1/4 cup Monk Fruit, granulated
1/4 tsp vanilla
Add the cream cheese and Monk Fruit, beat with electric mixer until well combined. Add the sour cream, blueberry jam, lemon rind and vanilla, using mixer until well combined. Add the egg, beat with mixer until light and fluffy.
Spoon 1 heaping tbsp of the dry, crumb mixture into each of the 8 muffins cups (or distribute evenly among the 8 liners. Press with your fingers to form an even crust in each. Spoon 1/4 cup of the cheesecake filling into each liner, evening them out with any remaining filling.
Bake in preheated oven for 15-20 mins, until the cheesecake is slightly firm and starting to get golden on top (they will still be slightly jiggly when moving the pan). Remove from oven and let cool for 10 mins. Transfer to a plate or rack and cool to room temperature. Place in refrigerator, letting chill for at least two hours prior to serving.
